Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the eggs, melted coconut oil, honey, vanilla, and almond extract (if using).
- In another bowl, mix the coconut flour, baking soda, and salt.
- Combine the wet and dry ingredients, then fold in the shredded coconut.
Baking
- Scoop the cookie dough by tablespoonfuls onto the baking sheet, spacing them about 2 inches apart, and flatten them slightly.
- Bake for 10-12 minutes until the edges are lightly golden.
- Allow to cool on the sheet for 5 minutes before transferring to a cooling rack.
Notes
These cookies taste delightful on their own but can be served with vanilla ice cream or a fresh fruit salad. Drizzling melted dark chocolate on top adds a wonderful layer of flavor.
