- In a large mixing bowl, cream the softened butter and vanilla extract together until smooth.
- Add the sweetened condensed milk and mix until well incorporated.
- Gradually add the powdered sugar and shredded coconut, stirring until a soft dough forms.
- Gently fold in the chopped maraschino cherries and pecans, ensuring even distribution.
- Using a small cookie scoop or spoon, form bite-sized balls from the dough and place them on a parchment-lined baking sheet.
- Refrigerate the balls for about 30 minutes to firm up.
Chocolate Coating
- In a double boiler or microwave-safe bowl, melt the semi-sweet chocolate chips with the shortening, stirring until smooth.
- Dip each chilled bite-sized ball into the melted chocolate, coating completely.
- Return the coated bites to the parchment paper and refrigerate until the chocolate sets, at least 1 hour.
Notes
These bites are best served chilled. Store in an airtight container in the refrigerator, or freeze for up to 3 months, layering with parchment paper to prevent sticking.
