Ingredients
  

Base Ingredients
  • 1 cup unsalted butter, softened
  • 1 tablespoon vanilla extract
  • 14 ounces sweetened condensed milk
  • 4 cups powdered sugar
  • 14 ounces sweetened shredded coconut
Mix-ins
  • 10 ounces maraschino cherries, drained and chopped
  • 3 cups pecans, chopped
Chocolate Coating
  • 6 cups semi-sweet chocolate chips
  • 4 tablespoons shortening

Method
 

Preparation
  1. In a large mixing bowl, cream the softened butter and vanilla extract together until smooth.
  2. Add the sweetened condensed milk and mix until well incorporated.
  3. Gradually add the powdered sugar and shredded coconut, stirring until a soft dough forms.
  4. Gently fold in the chopped maraschino cherries and pecans, ensuring even distribution.
  5. Using a small cookie scoop or spoon, form bite-sized balls from the dough and place them on a parchment-lined baking sheet.
  6. Refrigerate the balls for about 30 minutes to firm up.
Chocolate Coating
  1. In a double boiler or microwave-safe bowl, melt the semi-sweet chocolate chips with the shortening, stirring until smooth.
  2. Dip each chilled bite-sized ball into the melted chocolate, coating completely.
  3. Return the coated bites to the parchment paper and refrigerate until the chocolate sets, at least 1 hour.

Notes

These bites are best served chilled. Store in an airtight container in the refrigerator, or freeze for up to 3 months, layering with parchment paper to prevent sticking.
