  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (14.5 oz each) diced tomatoes
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil, chopped (optional) Add for extra flavor

Preparation

  • Heat olive oil in a large pan over medium heat.
  • Add chopped onion and cook until soft, about 5 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add diced tomatoes and sugar. Mix well.
  • Season with salt and pepper.
  • Simmer for 20-30 minutes, stirring occasionally.
  • If desired, mix in fresh basil before serving.

Notes

Let the sauce cool completely, then transfer it to an airtight container. Store it in the fridge for up to a week, or freeze it for up to 3 months. Use ripe, fresh tomatoes for the best flavor. Adjust the sugar based on the acidity of the tomatoes. Add red pepper flakes for a bit of heat if you like spicy food. Try adding other vegetables like bell peppers or zucchini for extra nutrition.
