Wet Ingredients

  • 1 cup pumpkin puree Ensure it is pure with no added sugars.
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup chocolate chips Consider using dark chocolate chips for a richer taste.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  • In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, mix together the pumpkin puree, maple syrup, eggs, milk, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until fully mixed.
  • Fold in the chocolate chips.
  • Pour the mixture into the prepared baking dish and spread it evenly.

Baking

  • Bake for 25-30 minutes or until the top is set and slightly golden.
  • Allow to cool slightly before serving.

Notes

Serve with Greek yogurt for extra creaminess. You can drizzle with maple syrup or chocolate sauce, or pair with fresh fruit for a refreshing contrast. Store leftovers in an airtight container in the fridge for up to a week, or freeze portions for longer storage.
