  • 4 cups fresh peaches, sliced Use ripe, juicy peaches for the best flavor.

Main ingredients

  • 1 cup sugar Divided into 1/2 cup for the peaches and 1/2 cup for the batter.
  • 2 teaspoons lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine sliced peaches, 1/2 cup sugar, and lemon juice; set aside.
  • In another bowl, mix flour, baking powder, salt, and the remaining 1/2 cup sugar.
  • Stir in milk, melted butter, and vanilla extract until just combined.

Baking

  • Pour batter into a greased baking dish.
  • Spoon the peach mixture over the batter, without stirring.
  • Bake for 30-35 minutes or until the cobbler is golden brown and a toothpick inserted comes out clean.
  • Serve warm, optionally with ice cream.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to 3 months.
