  • 3 pieces ripe bananas, mashed Use very ripe bananas for the best flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can substitute with flaxseed meal or applesauce for egg-free version.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter.
  • Mix in the baking soda and salt.
  • Add the sugar, beaten egg, and vanilla extract; mix well.
  • Finally, stir in the flour until just incorporated.

Baking

  • Pour the batter into a greased loaf pan.
  • Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool for a few minutes, then remove from the pan. Serve warm with butter or honey.

Notes

Store in an airtight container at room temperature for 3-4 days. Can freeze for up to 3 months. When ready to enjoy, thaw at room temperature or warm in the oven. Customize by adding nuts or chocolate chips.
