Ingredients
  

For the cookie dough

  • 115 grams 115 grams (1 stick or 1/2 cup) unsalted butter Make sure butter is at room temperature.
  • 90 grams 90 grams (1/2 cup) brown sugar
  • 50 grams 50 grams (1/4 cup) caster sugar or granulated sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 large 1 large egg
  • 210 grams 210 grams (1 and 1/2 cup) plain flour or all-purpose flour
  • 1/2 teaspoon 1/2 teaspoon baking soda
  • Pinch salt Pinch of salt
  • 150 grams 150 grams (1 cup) chocolate chips Plus extra for decorating
  • Sea salt flakes, for decorating For sprinkling on top

Instructions
 

Preparation

  • Place butter in a heatproof bowl and heat it in the microwave until just melted.
  • Add sugars, vanilla, and egg. Stir until smooth.
  • Add flour, baking soda, and salt. Stir until a soft cookie dough forms.
  • Add chocolate chips and stir until combined.
  • Chill cookie dough in the fridge for at least one hour or freeze for 30 minutes.

Baking

  • Preheat the oven to 180°C (350°F) standard / 160°C (320°F) fan-forced.
  • Line two baking trays with baking or parchment paper.
  • Roll balls of cookie dough, approximately 1.5 tablespoons each, using your hands. Place them on the prepared trays.
  • Bake cookies for 10-11 minutes. While still warm, add extra chocolate chips on top and sprinkle with sea salt.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze in a zip-lock bag for longer storage.
