  • 3 pieces ripe bananas Use very ripe bananas for the best flavor.
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 large egg Can be substituted with a flax egg or applesauce for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until smooth and stir in the melted butter.
  • Mix in the sugar, egg, and vanilla extract.
  • Sprinkle the baking soda and salt over the mixture and mix in.
  • Add the flour and mix until just incorporated.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or cold, plain or with butter. Customize with nuts or chocolate chips if desired. Store in an airtight container at room temperature for 3-5 days, or freeze for up to three months.
