Ingredients
  

Banana Bread

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 pieces ripe bananas, mashed Make sure they are very ripe for the best flavor.
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 large egg
  • 0.33 cup vegetable oil Can substitute with melted coconut oil or unsweetened applesauce.
  • 1 teaspoon vanilla extract

Cinnamon Swirl

  • 0.33 cup brown sugar
  • 1 tablespoon ground cinnamon

Glaze

  • 0.5 cup powdered sugar
  • 1-2 tablespoons milk Add more for a thinner glaze.
  • 0.5 teaspoon vanilla extract

Optional add-ins

  • Chopped walnuts For extra crunch and flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a bowl, whisk together the flour, baking soda, and salt.
  • In a separate bowl, mix the mashed bananas, granulated sugar, brown sugar, egg, vegetable oil, and vanilla until everything is well combined.
  • Stir the dry ingredients into the wet mixture until just combined. Don’t overmix!

Baking

  • Pour half of the batter into the prepared pan. Sprinkle with the cinnamon swirl mixture. Then add the remaining batter and use a knife to swirl it gently.
  • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Glazing

  • For the glaze, whisk the powdered sugar with milk and vanilla until smooth, then drizzle it over the cooled bread.
  • Sprinkle some chopped walnuts on top if desired.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Thaw before enjoying.
