Preparation

  • Preheat the Oven: Set your oven to 350°F (175°C) and line your muffin tin with paper liners or grease it.
  • Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and ginger until well combined.
  • Prepare Wet Ingredients: In another bowl, whisk together the pumpkin puree, eggs, milk, and melted butter until smooth. Add a splash of vanilla extract.
  • Combine: Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined; avoid overmixing.
  • Scoop and Fill: Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full. Sprinkle cinnamon sugar on top.

Baking

  • Bake to Perfection: Place the muffin tray in the preheated oven. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and Enjoy: Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack. Let cool slightly before indulging.

Notes

Use room temperature ingredients for better mixing. Check doneness early to avoid overbaking. Avoid opening the oven door frequently.
