Ingredients
  

Dry Ingredients

  • 1/2 cup rolled oats (45g)
  • 1/2 tsp ground cinnamon
  • 1/16 tsp salt

Wet Ingredients

  • 1/4 cup applesauce (60g) or pumpkin, yogurt, or mashed banana
  • 1/4 cup water (60g)
  • 1 1/2 tbsp pure maple syrup (22g) or stevia to taste
  • 1/4 tsp pure vanilla extract
  • 1 tbsp almond butter or coconut oil optional (15g)
  • 1 spoonful raisins or chopped walnuts optional

Preparation

  • Preheat your oven to 375° Fahrenheit (190° Celsius).
  • Grease a one-cup ramekin, heat-safe dish, or mini loaf pan with oil, or line the bottom with parchment paper to prevent sticking.
  • Stir together all the dry ingredients in a bowl.
  • Whisk in all the wet ingredients until a smooth batter forms.
  • Optional: Fold in raisins or chopped walnuts for added texture and flavor.
  • Spread the batter evenly into the prepared ramekin or dish.

Baking

  • Place it on the center rack of the oven and bake for fifteen minutes.
  • If using a microwave, cook on high for 1 to 3 minutes until the oatmeal is fluffy; cooking times may vary based on microwave wattage.
  • Allow the baked oatmeal to cool briefly before serving.

Notes

Enjoy warm, topped with frosting or yogurt. Store in the refrigerator for up to five days in an airtight container. Reheat in the microwave. Freeze portions tightly wrapped for longer shelf life. Experiment with flavors by adding nutmeg or protein powder for an extra kick, or try different fruits or nuts.
