Ingredients

Dry Ingredients
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
Topping
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon for topping
  • 4 tablespoons unsalted butter, melted for topping

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1 teaspoon of ground cinnamon.
  3. In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
  5. Spoon half of the batter into the prepared loaf pan and spread it evenly.
Topping
  1. In a small bowl, combine the brown sugar and 1 teaspoon of ground cinnamon. Sprinkle half of this mixture over the batter in the pan.
  2. Pour the remaining batter on top and sprinkle the rest of the cinnamon sugar mixture.
  3. Using a knife, gently swirl the cinnamon sugar through the batter to create a marbled effect.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. While still warm, brush the loaf with melted butter and sprinkle the top with cinnamon sugar for a delicious coating.
  3. Allow to cool slightly before slicing and serving.

Notes

Delightful on its own but can be served with fresh fruit or whipped cream. Store in an airtight container at room temperature for up to three days or refrigerate for up to a week. For freezing, wrap slices in plastic wrap and place them in a freezer bag for up to three months.
