  • 1 large egg, beaten
  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon Experiment with spices for unique flavors.

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter into the mashed bananas.
  • Add baking soda and salt, and mix well.
  • Next, stir in the sugar, beaten egg, and vanilla extract until everything is combined.
  • Gradually add the flour and ground cinnamon, mixing until just combined.
  • Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be enjoyed plain, with cream cheese or butter, or paired with vanilla ice cream for dessert. Store in an airtight container for up to three days or freeze for longer storage.
