Method
Preparation
- Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the eggs and granulated sugar until thick. Stir in the vanilla and milk. Gradually fold in the dry ingredients.
- Pour the batter into the prepared pan and spread evenly. Bake for 15 minutes.
- Once baked, let the cake cool slightly, then roll it up with the parchment paper. Allow it to cool completely.
Filling and Ganache
- For the filling, whip the heavy cream with powdered sugar until stiff peaks form.
- Unroll the cooled cake and spread the cream filling evenly. Roll the cake back up without the parchment.
- For the ganache, melt the dark chocolate and butter together. Let it cool slightly, then pour it over the rolled cake.
Decoration and Serving
- Decorate the cake as desired to resemble a log and chill before serving.
- Serve the Christmas Yule Log Cake chilled for the best taste. Slice it into pieces and enjoy with a cup of hot cocoa or coffee.
Notes
Make sure to be gentle when rolling the cake to avoid cracking. Let the ganache cool slightly before pouring it to ensure it doesn’t melt the whipped cream. You can also add peppermint extract or coffee to the filling for a unique twist.
