Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, powdered sugar, and salt.
- In another bowl, cream the butter and vanilla until light and fluffy.
- Gradually add the dry ingredients to the butter mixture and mix until combined.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Use a cookie cutter to cut out tree shapes.
- For half of the cookies, cut out a smaller tree shape in the center to create a window.
Baking
- Place cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
- Allow to cool, then spread jam on the whole cookies and top with the cut-out cookies.
- Dust with powdered sugar before serving.
Notes
Store in an airtight container at room temperature for up to a week or freeze for up to three months. Layer with parchment paper when freezing to prevent sticking.
