Cookie Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened Ensure butter is softened but not melted.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup jam (raspberry or apricot) Use your favorite jam for filling.
  • Powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, powdered sugar, and salt.
  3. In another bowl, cream the butter and vanilla until light and fluffy.
  4. Gradually add the dry ingredients to the butter mixture and mix until combined.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Use a cookie cutter to cut out tree shapes.
  7. For half of the cookies, cut out a smaller tree shape in the center to create a window.
Baking
  1. Place cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
  2. Allow to cool, then spread jam on the whole cookies and top with the cut-out cookies.
  3. Dust with powdered sugar before serving.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. Layer with parchment paper when freezing to prevent sticking.
