Preparation
  1. In a bowl, mix the crushed sugar cookies with melted butter until well combined.
  2. Press this mixture into the bottom of a rectangular dish to form a compact crust.
  3. In another bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. In a separate bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully integrated.
  6. Spread the cream cheese filling evenly over the sugar cookie crust.
  7. Place the dish in the refrigerator for at least 4 hours or until the filling is firm.
  8. Just before serving, add colorful sprinkles on top, then cut into bars.

Notes

These bars can be served with a drizzle of chocolate or whipped cream. They can be stored in the refrigerator for up to five days or frozen for up to three months. To enhance flavors, add a pinch of cinnamon or nutmeg to the filling.
