Ingredients
  

For the crust
  • 1.5 cups crushed sugar cookies
  • 3 tablespoons melted butter
For the filling
  • 16 ounces cream cheese Make sure it's at room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 pieces eggs Add one at a time
  • 1/4 cup sour cream
  • 1/2 cup whipped cream For topping
  • Sprinkles for decoration Use festive sprinkles

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the crushed sugar cookies and melted butter. Press this mixture firmly into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until creamy and smooth. Gradually add sugar and vanilla extract, mixing until well combined.
  4. Add the eggs, one at a time, blending well after each addition. Then, mix in the sour cream until fully integrated.
  5. Pour your cheesecake filling over the prepared crust in the springform pan.
  6. Bake in the oven for 50-60 minutes, or until the center is set and not wobbly.
  7. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours to set.
  8. Before serving, top with whipped cream and sprinkle on some festive sprinkles for an extra touch of cheer!

Notes

Store leftovers tightly covered in the refrigerator for up to 5-7 days. For longer storage, freeze individual slices for up to 2 months.
