For the Jello Balls
  • 1 box Lime Jello Prepare according to package instructions.
  • 1 box Strawberry Jello
  • 1.5 cups Plain Greek Yogurt Can be substituted with non-dairy yogurt.
  • 6.5 cups Sweetened Coconut

Preparation
  1. Prepare the Lime Jello as directed on the package. Once made, let it set in the refrigerator until firm.
  2. In a bowl, whisk together the Greek yogurt and Strawberry Jello until you achieve a smooth consistency.
  3. Once the Lime Jello has fully set, use a melon baller or a spoon to scoop out small balls.
  4. Dip each jello ball into the Strawberry mixture, ensuring they are well-coated.
  5. Roll the coated balls in sweetened coconut until they are completely covered.
  6. Chill the Jello balls in the fridge for several hours, or until you’re ready to serve them.

Notes

These jello balls can be served with fresh seasonal fruits or topped with whipped cream or a drizzle of chocolate sauce. Store in an airtight container in the refrigerator for up to a week and avoid freezing.
