  • 4 cups strawberries, hulled and chopped Use fresh, ripe strawberries for the best flavor.
  • 2 cups sugar Adjust sweetness as desired.
  • 1/4 cup lemon juice
  • 1 packet pectin
  • 1/2 teaspoon cinnamon (optional) Add for extra spice.

Method
 

Preparation
  1. In a large pot, combine the strawberries, sugar, and lemon juice. Stir well and let sit for 15 minutes.
  2. Add the pectin and cinnamon (if using) to the pot and bring to a boil over medium-high heat, stirring constantly.
  3. Once boiling, continue to stir for about 1-2 minutes until the mixture thickens.
  4. Remove from heat and ladle the jam into sterilized jars.
  5. Allow to cool completely before sealing and refrigerating.

Notes

Store in the refrigerator for up to 3 months. For longer storage, freeze in airtight containers. Reheat gently in a saucepan if desired.
