Preparation
- In a large pot, combine the strawberries, sugar, and lemon juice. Stir well and let sit for 15 minutes.
- Add the pectin and cinnamon (if using) to the pot and bring to a boil over medium-high heat, stirring constantly.
- Once boiling, continue to stir for about 1-2 minutes until the mixture thickens.
- Remove from heat and ladle the jam into sterilized jars.
- Allow to cool completely before sealing and refrigerating.
Notes
Store in the refrigerator for up to 3 months. For longer storage, freeze in airtight containers. Reheat gently in a saucepan if desired.
