  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened Make sure the butter is at room temperature for better creaming.
  • 2 large eggs Can be substituted with flaxseed meal mixed with water for a vegetarian option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Sprinkles or chocolate chips for decoration Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture.
  6. Fold in sprinkles or chocolate chips.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Bake for 8-10 minutes or until the edges are lightly golden.
  2. Let them cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served on their own or with a glass of milk or hot cocoa. Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. For long-term storage, freeze the cookies in a single layer and transfer to a freezer-safe bag.
