  1. In a large mixing bowl, combine the Rice Krispies cereal, creamy peanut butter, powdered sugar, melted butter, and vanilla extract. Mix well until all ingredients are fully incorporated.
  2. Using your hands, shape the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  3. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each, until smooth.
  4. Dip each Rice Krispie ball into the melted chocolate, ensuring they are fully coated, then place them back on the parchment-lined sheet.
  5. Immediately sprinkle the coated balls with holiday sprinkles before the chocolate sets.
  6. Refrigerate the balls for at least 30 minutes to allow the chocolate to harden.
  7. Serve chilled and enjoy your festive treat!

Notes

Store in an airtight container in the refrigerator for up to a week. For freezing, layer the balls between parchment paper in a freezer-safe container; they can last up to a month. Thaw in the fridge before serving.
