  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a round cake pan.
  2. In a large mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
  3. Add in the eggs one at a time, ensuring to mix well after each addition.
  4. In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt to eliminate clumps.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until just incorporated.
  6. Gently fold in the mixed dried fruits and nuts to create delightful pockets of flavor.
  7. Pour the batter into your prepared cake pan, smoothing the top with a spatula.
  8. Bake in the oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow it to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
