Preparation
- Preheat your oven to 425°F (220°C).
- Rub the beef tenderloin generously with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
Cooking
- Heat a skillet over medium-high heat and sear the beef until browned on all sides—approximately 3-4 minutes per side.
- Transfer the skillet (if oven-safe) to the oven and roast for 20-30 minutes, aiming for an internal temperature of 135°F for medium-rare.
- Remove from oven and let the beef rest for 10-15 minutes before slicing.
Making the Sauce
- If desired, deglaze the skillet with red wine, scraping up the browned bits for added depth of flavor.
Serving
- Slice the tenderloin and serve with your favorite sides.
Notes
Allow beef to come to room temperature before cooking. Invest in a meat thermometer for perfect doneness. Don't discard pan drippings as they make a great base for a sauce. Store leftovers properly and reheat with broth or wine.
