  • 3-4 pounds Beef tenderloin
  • 2 tablespoons Olive oil for rubbing
  • 4 cloves Garlic, minced
  • 2 tablespoons Rosemary, chopped
  • 2 tablespoons Thyme, chopped
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons Butter for flavor or sauce
  • 1 cup Red wine, optional for sauce

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rub the beef tenderloin generously with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
Cooking
  1. Heat a skillet over medium-high heat and sear the beef until browned on all sides—approximately 3-4 minutes per side.
  2. Transfer the skillet (if oven-safe) to the oven and roast for 20-30 minutes, aiming for an internal temperature of 135°F for medium-rare.
  3. Remove from oven and let the beef rest for 10-15 minutes before slicing.
Making the Sauce
  1. If desired, deglaze the skillet with red wine, scraping up the browned bits for added depth of flavor.
Serving
  1. Slice the tenderloin and serve with your favorite sides.

Notes

Allow beef to come to room temperature before cooking. Invest in a meat thermometer for perfect doneness. Don't discard pan drippings as they make a great base for a sauce. Store leftovers properly and reheat with broth or wine.
