Preparation
- Melt the chocolate in a large bowl either in the microwave in short bursts with stirring in between, or gently over a pan of hot water.
- Once melted, stir in the salted peanuts until well coated.
- Line two trays or plates with parchment paper.
- Dollop spoonfuls of the mixture onto the parchment, pressing each cluster slightly to form a compact shape.
- Refrigerate for about 30 minutes until the clusters harden.
- Serve immediately or package as gifts. Keep refrigerated.
Notes
Store in an airtight container in the refrigerator. They can be frozen for up to two months. Drizzle with white chocolate for decoration, or add a sprinkle of sea salt before hardening.
