Dry Ingredients

  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup packed brown sugar, light or dark
  • 1/4 cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract

  • 1 cup semi-sweet chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line 2 large baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth, about 1-2 minutes.
  • Add the egg and vanilla extract, whisking until well combined.
  • Gradually add the dry ingredients to the wet mixture. Mix until almost combined, then fold in the chocolate chips to form a soft dough.

Baking

  • Use a large 2 oz cookie scoop to portion out cookie dough balls onto the prepared baking sheets, leaving at least 3 inches between each.
  • Bake in the center of the oven for 10-12 minutes, or until cookies are puffed and edges are golden brown.
  • Remove from the oven and gently reshape cookies with a round cookie cutter if necessary.
  • Cool the cookies on the baking sheet for about 5 minutes, then transfer to a wire rack.

Notes

For the best results, use room temperature eggs and be careful not to overmix the dough after adding dry ingredients. Consider sprinkling a little sea salt on top before baking for extra flavor.
