Cookie Base
  • 1 cup cream cheese, softened Use room temperature for smoother batter.
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar Adjust sweetness to taste.
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can be substituted with gluten-free blend.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Mix-ins
  • 1 cup semi-sweet chocolate chips Experiment with dark, white, or butterscotch chips.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the cream cheese and butter until smooth and creamy.
  3. Add the sugar and beat until light and fluffy.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Fold in the chocolate chips gently.
  8. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden but the centers remain soft.
  2. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These cookies are great served warm with ice cream or alongside fresh fruit. Store in an airtight container in the fridge for up to a week or freeze for up to three months. To reheat, microwave for a few seconds until warm. For variations, consider adding citrus zest or cinnamon.
