Preparation

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • In another bowl, combine the melted butter and sugar, then mix in the eggs and vanilla until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the chocolate chips.

Baking

  • Divide the batter evenly among the muffin cups.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool for a few minutes before removing from the tin and enjoy!

Notes

These muffins are great served with whipped cream or ice cream. They can also be stored in an airtight container for up to a week or frozen for three months. To reheat, microwave for 15-20 seconds or warm in the oven.
