Ingredients
  

Cupcake Base
  • 1/2 cup butter Unsalted butter recommended.
  • 4 oz chocolate bar Choose semi-sweet or dark chocolate.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs Room temperature.
  • 1 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour Sifted.
  • 3 cups chocolate chips For gooey pockets of flavor.
Whipped Cream Frosting
  • 1 1/2 cups whipping cream Chilled.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a double boiler or microwave, melt the butter and chocolate bar together, stirring until smooth. Set aside to cool slightly.
  3. In a large mixing bowl, blend the granulated sugar, brown sugar, and the melted chocolate mixture.
  4. Add the eggs one at a time, mixing well after each addition. Then stir in vanilla extract.
  5. Gently fold in the all-purpose flour until just combined, then add the chocolate chips.
Baking
  1. Fill the cupcake liners about 3/4 full with the batter.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  3. Allow baked cupcakes to cool in the pan for a few minutes before transferring to a wire rack.
Frosting
  1. Whip the chilled whipping cream in a bowl until soft peaks form, then pipe it onto the cooled cupcakes.

Notes

These cupcakes are best served fresh. Consider adding caramel sauce, sea salt, or fresh berries as toppings.
