  • 2 cups canned chickpeas (drained and rinsed) or dried chickpeas (soaked and cooked)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (cilantro or parsley), chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 cup flour (all-purpose or chickpea flour) Adjust depending on moisture level
  • 1 teaspoon salt

Preparation

  • If using canned chickpeas, drain and rinse them. If using dried chickpeas, soak them overnight and cook until tender.
  • In a skillet, heat some oil and sauté finely chopped onions and garlic until soft and fragrant. Allow them to cool slightly.
  • In a large bowl, roughly mash the chickpeas with a fork or a potato masher, keeping some texture for bite.
  • Add the sautéed onions and garlic, chopped herbs, spices, and flour to the mashed chickpeas. Mix until well combined. Adjust the amount of flour as needed.
  • Shape the mixture into small patties, about the size of your palm. If they feel too moist, add a little more flour to bind them.

Cooking

  • Heat a skillet over medium heat and add a splash of oil. Cook the patties for about 3-4 minutes on each side until golden brown and crispy.
  • Serve warm, paired with your favorite dipping sauce, atop salads, or stuffed in pita with fresh veggies.

Notes

Let the formed patties rest in the fridge for at least 30 minutes before cooking for better texture. Baking is an alternative; coat with oil and bake at 400°F for 20-25 minutes, flipping halfway.
