Ingredients
  

Filling Ingredients

  • 2 cups shredded chicken Use rotisserie chicken for convenience.
  • 1 cup cream cheese Softened for easier mixing.
  • 1 cup shredded cheese Monterey Jack or pepper jack for extra flavor.
  • 1/2 cup salsa Choose your favorite jarred salsa.
  • 1 tsp garlic powder
  • 1 tsp chili powder Adjust for spiciness.

Wrapping Ingredients

  • 8 pieces flour tortillas Corn tortillas can also be used.
  • 2 tbsp oil For brushing the taquitos.
  • 1/2 cup sour cream For serving.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, mix shredded chicken with cream cheese, cheese, salsa, garlic powder, and chili powder.
  • Spoon the chicken mixture onto each tortilla, roll them tightly, and place seam-side down on a baking sheet.
  • Brush the taquitos with oil.

Baking

  • Bake for 15-20 minutes or until golden brown and crispy.

Serving

  • Serve chicken taquitos hot out of the oven with sour cream and extra salsa for dipping.

Notes

If you have leftovers, cool completely before storing in an airtight container in the fridge for 3-4 days or freeze wrapped well. Reheat in the oven or microwave. Optional: Add black beans or corn to the filling for extra flavor.
