  • 1 lb Chicken breast Fresh or rotisserie chicken works well.
  • 6 oz Fresh spinach Baby spinach preferred for milder flavor.
  • 2 tbsp Unsalted butter Gives control over the salt levels.
  • 3 cloves Garlic, minced Adds a punch of flavor.
  • 1 cup Heavy cream The star of the sauce.
  • 1 cup Parmesan cheese, freshly grated Avoid pre-grated options.
  • 8 oz Fettuccine or preferred pasta Spaghetti works fine too.

Instructions
 

Cooking the Chicken

  • In a skillet, melt one tablespoon of butter over medium heat. Add seasoned chicken breasts and cook until golden brown and cooked through, roughly 6-7 minutes per side. Remove and let rest before slicing.

Sautéing the Spinach

  • In the same skillet, add another tablespoon of butter and minced garlic. Sauté until fragrant, about 30 seconds. Toss in the fresh spinach and cook until wilted. Remove and set aside.

Preparing the Alfredo Sauce

  • Pour in the heavy cream, scraping up any bits stuck to the pan. Add a pinch of salt and freshly cracked pepper. Let it simmer for 2-3 minutes until slightly thickened. Slowly stir in the Parmesan cheese until melted and smooth.

Combining Everything

  • Add the sliced chicken, sautéed spinach, and cooked pasta to the sauce. Toss until everything is well coated and heated through.

Serving

  • Finish with extra Parmesan and a sprinkle of parsley, and dive into the rich, creamy goodness.

Notes

Tip: Reserve some pasta water to adjust the sauce's thickness if needed.
