Ingredients
  

For the Kebabs

  • 2 lb Chicken breasts, cut into bite-sized pieces
  • 1 Pineapple, cut into bite-sized chunks
  • 2 Red bell peppers, cut into large pieces
  • 1 Large onion, cut into large pieces
  • 1 lb Bacon, cut in half
  • 1.5 C Pineapple juice
  • 2 Tbsp Cornstarch
  • 0.5 C Brown sugar
  • 3 Tbsp Soy sauce Use gluten-free soy sauce for a gluten-free version.
  • Skewers Soak in water for at least 30 minutes to prevent burning.

Preparation

  • Wrap each piece of pineapple and chicken with a piece of bacon.
  • Thread pieces of red pepper, onion, bacon-wrapped chicken, and pineapple onto the skewers.
  • Preheat the grill.
  • In a saucepan on the stove, bring pineapple juice, cornstarch, brown sugar, and soy sauce to a boil.
  • Reduce to a simmer and cook for 5 minutes. Let it cool.

Grilling

  • Place the skewers on the grill and cook for 5-6 minutes on each side, basting with the sauce as you cook.
  • Grill until the chicken is fully cooked and the bacon is crispy.

Notes

Serve hot off the grill with rice, a fresh salad, or grilled vegetables. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven or on the grill for a few minutes.
