  • 1 lb ground chicken
  • 1 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs Use fresh breadcrumbs for a moister meatloaf.
  • 1/4 cup parsley, chopped
  • 1 egg
  • to taste salt and pepper Add a dash of crushed red pepper flakes for spice if desired.
  • 1/2 cup ketchup (for topping)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine ground chicken, Parmesan cheese, minced garlic, breadcrumbs, parsley, egg, salt, and pepper.
  • Mix until well combined.
  • Form the mixture into a loaf shape and place it in a greased baking dish.
  • Spread the ketchup on top of the meatloaf.

Cooking

  • Bake for 45-55 minutes until cooked through.
  • Let it rest for a few minutes before slicing.
  • Serve warm and enjoy!

Notes

Leftover meatloaf can be stored in the refrigerator for up to 3 days. Reheat in the microwave or in the oven at 350°F until warmed through. For longer storage, freeze for up to 3 months, wrapped well.
