  • 1 pound chicken breast, diced Use fresh chicken for best results.
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Fresh or frozen can be used.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Don't skip this for flavor.
  • 1 teaspoon salt Adjust according to taste.
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth Can substitute with vegetable broth for vegetarian option.

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Toss in the diced chicken and cook until browned, approximately 5-7 minutes.
  4. Add the mixed vegetables to the skillet and sauté for another 5 minutes.
  5. Pour in the chicken broth and season with salt, pepper, and Italian seasoning.
  6. Bring to a simmer and cook until the chicken is fully cooked and the vegetables are tender, about 15 minutes.
  7. Serve hot and enjoy!

Notes

Pair with a side of fluffy rice or creamy mashed potatoes. Fresh garden salad complements nicely, and crusty bread soaks up the juices well. For vegetarian option, replace chicken with tofu or chickpeas.
