  • 2 breasts boneless skinless chicken breasts, sliced into thin strips Make sure to season with salt and pepper.
  • 2 cups penne pasta Cook according to package instructions.
  • 1.5 cups broccoli florets Do not overcook; keep vibrant.
  • 3 cloves garlic, finely minced
  • to taste Fresh parsley, chopped, for garnish Add just before serving.

Cooking

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat a bit of oil over medium heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes.
  • Add the garlic and broccoli to the skillet, cooking until the broccoli is tender, about 3-4 minutes.
  • Combine the cooked pasta with the chicken and vegetable mixture, tossing everything together.
  • Garnish with fresh parsley before serving.

Notes

Pairs well with side salad or garlic bread. For a heartier meal, add Parmesan cheese or olive oil. If storing leftovers, keep in an airtight container for up to three days in the fridge or freeze for up to three months without toppings.
