  • ½ cup milk of choice (unsweetened almond milk recommended)
  • 2 tsp sweetener of choice (maple syrup or honey, optional) Adjust based on taste

Preparation

  • In a bowl or mason jar, combine chia seeds with milk, a pinch of salt, and optionally maple syrup. Mix well or shake the jar.
  • Let the mixture rest for 5-10 minutes, preferably in the refrigerator.
  • Stir the pudding from bottom to up to break any clumps of chia seeds that may have formed.
  • Close the jar or cover the bowl and refrigerate for at least 2 hours or overnight until thickened.
  • Stir again before serving and add your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Stir before serving as it may thicken further overnight. For a smoother texture, blend the mixture before refrigerating. Experiment with different types of milk and adjust sweetness according to your taste.
