Main Ingredients

  • 3 cups cherry tomatoes (washed & stems removed) Use ripe tomatoes for the best flavor.
  • 1 small sweet onion
  • 3 small garlic cloves (peeled) Avoid chunks of garlic in the salsa.
  • 3/4 cup packed cilantro leaves Can be substituted with parsley if desired.
  • 1 lime juiced Adjust to taste for a zippier flavor.
  • Salt To taste.

Preparation

  • To the bowl of a food processor fitted with the blade attachment, add the onion and garlic. Pulse until finely processed.
  • Add the tomatoes and cilantro, and continue pulsing until the mixture reaches your desired consistency.
  • Transfer the salsa to a serving bowl. Stir in the lime juice and salt, then serve.

Notes

Best served fresh with tortilla chips or as a topping for grilled chicken, fish, or tacos. The salsa can be stored in an airtight container in the refrigerator for up to 3 days.
