Ingredients
  

For the muffins

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1/4 cup salted butter Softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 21 ounces cherry pie filling

For the streusel topping

  • 1/4 cup salted butter Softened
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon milk

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, whisk together flour, salt, and baking powder.
  • In another bowl, beat the eggs, then add butter, sugar, vanilla extract, and milk; mix until combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the cherry pie filling.
  • Spoon the batter into the muffin cups, filling them about halfway.
  • For the streusel topping, mix together butter, flour, baking powder, sugar, cinnamon, and milk until crumbly; sprinkle on top of each muffin.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

Serve these muffins warm for an extra special treat! They are great on their own, but you can also serve them with a dollop of whipped cream or a scoop of vanilla ice cream for dessert. Store in an airtight container at room temperature for 2-3 days or freeze them for up to three months.
