Ingredients
  

Dry Ingredients

  • 2 2/3 cups all-purpose flour
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cup salted sweet cream butter Make sure butter is softened.
  • 1/2 cup granulated sugar
  • 2/3 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tablespoons reserved cherry juice
  • 2 to 3 drops pink food color Optional, for color.

Add-ins

  • 1 cup maraschino cherries Chopped.
  • 2 cups semisweet chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour and baking soda. Set aside.
  • In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until smooth.
  • Beat in the egg, vanilla extract, almond extract, and cherry juice until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the maraschino cherries, chocolate chips, and food color.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  • Bake for 10-12 minutes or until the edges are golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh out of the oven! Pair them with a glass of milk or a scoop of ice cream. Store in an airtight container at room temperature for about a week, or freeze them for longer storage.
