For the Zucchini Sticks

  • 3 medium zucchinis Washed and cut into sticks
  • 1 cup shredded mozzarella cheese For topping
  • 1/2 cup grated Parmesan cheese For the breadcrumb mixture
  • 1/2 cup all-purpose flour
  • 2 large eggs Beaten
  • 1 cup Italian seasoned breadcrumbs Mixed with Parmesan and seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper, lightly spraying it with cooking spray.
  • Wash the zucchinis and cut them into sticks about 3 inches long and 1/2 inch thick.
  • Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.

Breading

  • Dip each zucchini stick into the flour, shaking off any excess, then dip it into the beaten eggs, and finally coat it with the breadcrumb mixture. Press gently to help it stick.
  • Arrange the coated zucchini sticks in a single layer on the prepared baking sheet.

Baking

  • Evenly sprinkle shredded mozzarella cheese over the zucchini sticks.
  • Bake for 20-25 minutes or until the zucchini is tender and the cheese is melted and golden.
  • Remove from the oven and let cool slightly before serving.

Notes

For extra crunch, consider adding more breadcrumbs or using panko breadcrumbs instead. You can also experiment with different spices such as paprika or Italian herbs in the breadcrumb mixture.
