Preparation

  • Preheat the oven to 425°F (220°C).
  • Wash the zucchinis and cut them into sticks, about ½ inch thick.
  • In one bowl, whisk the eggs.
  • In another bowl, mix panko breadcrumbs, grated mozzarella, grated parmesan, and seasonings.

Coating

  • Dip each zucchini stick into the egg, allowing excess to drip off.
  • Dredge it in the breadcrumb mixture, ensuring it’s well coated.
  • Place it on a baking sheet lined with parchment paper.

Baking

  • Arrange the sticks in a single layer and bake for 20-25 minutes or until golden brown and crispy.
  • Flip halfway through for even cooking.

Notes

For extra crunch, try placing the baking sheet in the oven for a few minutes before adding the zucchini. Use a wire rack on the baking sheet to allow hot air to circulate around the sticks.
