  • 1 pound lean ground beef Can substitute with turkey or plant-based options.
  • 4 to 6 medium Russet potatoes Wash and peel before cutting.
  • 1 packet taco seasoning About 1 ounce.
  • 1/2 cup water
  • 1 cup shredded cheese Optional, sprinkle on top before baking.

Optional Toppings

  • to taste Sour cream Serve on top.
  • to taste Chopped green onions Serve on top.

Preparation

  • Preheat oven to 400°F (200°C).
  • Wash and peel the potatoes, then cut them into cubes.
  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Stir in the taco seasoning and water; simmer for a few minutes.

Cooking

  • In a baking dish, combine the potatoes and beef mixture.
  • Cover with foil and bake for about 30 minutes or until the potatoes are tender.
  • Remove foil, sprinkle cheese on top, and return to the oven until melted, about 5-10 minutes.

Serving

  • Serve hot with sour cream and green onions on top if desired.

Notes

Customize this dish by adding black beans or corn, or spice it up with diced jalapeños. For vegetarian options, use sautéed zucchini and bell peppers.
