  • 4-6 medium Russet potatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • Chopped green onions (for garnish)
  • Salsa (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and pierce the russet potatoes with a fork, then bake them in the oven for about 45-60 minutes until tender.

Cooking

  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Stir in the taco seasoning and a little water according to packet instructions.

Assembly

  • Once the potatoes are baked, slice them open and fluff the insides with a fork.
  • Spoon the seasoned beef mixture into each potato, top with shredded cheese, and return to the oven for an additional 5-10 minutes until cheese is melted.
  • Serve with sour cream, chopped green onions, and salsa if desired.

Notes

To store leftover Cheesy Taco Potatoes, place them in an airtight container and refrigerate for up to 3-4 days. Reheat in the microwave or oven until warmed through. For longer storage, wrap each cooked potato tightly in plastic wrap and foil, and freeze. Thaw in the refrigerator before reheating.
