  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup grated Parmesan cheese
  • 2 lbs baby potatoes or small Yukon Gold potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the olive oil, ranch seasoning mix, garlic powder, and onion powder.
  • Cut the baby potatoes in half and add them to the bowl, tossing them until well coated.
  • Spread the potatoes in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for about 25-30 minutes or until golden and tender.
  • Once cooked, sprinkle the grated Parmesan cheese and shredded cheddar cheese over the potatoes.
