  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup grated Parmesan cheese
  • 2 lbs baby potatoes or small Yukon Gold potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine the olive oil, ranch seasoning mix, garlic powder, and onion powder.
  • Add the baby potatoes to the bowl and toss until they are well coated.
  • Spread the potatoes in a single layer on a baking sheet.

Cooking

  • Bake for about 25-30 minutes or until the potatoes are tender and golden brown.
  • Remove from the oven and sprinkle with Parmesan cheese and cheddar cheese.
  • Return to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Serve hot.

Notes
