  • 3 tbsp olive oil Used for coating the potatoes
  • 1 packet (1 oz) ranch seasoning mix Provides flavor to the potatoes
  • 1/2 cup grated Parmesan cheese For topping
  • 2 lbs baby potatoes or small Yukon Gold potatoes Cut into halves or quarters
  • 1 cup shredded cheddar cheese For topping
  • 1/2 tsp garlic powder Adds depth of flavor
  • 1/2 tsp onion powder Adds depth of flavor

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the baby potatoes in half or quarters if they are larger.
  • In a large bowl, combine olive oil, ranch seasoning mix, garlic powder, and onion powder.
  • Add the potatoes to the bowl and toss until they are evenly coated.

Cooking

  • Spread the potatoes on a baking sheet in a single layer.
  • Bake for 25-30 minutes or until the potatoes are golden and crispy.
  • Remove from the oven and sprinkle the grated Parmesan cheese and shredded cheddar cheese on top.
  • Return to the oven for an additional 5-10 minutes, until the cheese is melted.
  • Serve warm and enjoy!

Notes

These potatoes make a great side dish, pairing well with grilled meats or salads. Store leftovers in an airtight container. For crispy reheating, use the oven instead of the microwave.
