Ingredients
  

Cheese Mixture

  • 1 cup shredded mozzarella cheese Fresh mozzarella works best
  • ½ cup grated parmesan cheese

Breading

  • 1 cup panko breadcrumbs For extra crunch

Binding

  • 2 large eggs
  • to taste Salt and pepper
  • to taste Fresh parsley (optional) For garnish

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the mozzarella and parmesan cheese until well mixed.
  • In a separate bowl, whisk the eggs with salt and pepper.
  • Form the cheese mixture into golf ball-sized bites.

Breading

  • Dip each bite into the egg mixture, then roll it in breadcrumbs until fully coated.

Baking

  • Place the coated bites on the prepared baking sheet and bake for 15-20 minutes until golden brown.

Notes

Serve these bites hot out of the oven with marinara sauce, ranch dressing, or a fresh salad. They can be stored in an airtight container for up to 3 days in the refrigerator. Reheat in the oven at 350°F (175°C) for a few minutes.
