Cheesy Old Fashioned Goulash

Ingredients
  

Meat and base ingredients

  • 2 lbs ground beef or turkey Ground turkey can be used for a lighter option.
  • 3 tsp minced garlic
  • 1 large yellow onion, diced
  • 2.5 cups water
  • 1/2 cup beef broth
  • 1/3 cup olive oil
  • 2 15-ounce cans tomato sauce
  • 2 15-ounce cans diced tomatoes

Seasonings

  • 1 tbsp Italian seasoning
  • 1 tbsp Adobo seasoning
  • 3 pieces bay leaves
  • 1 tbsp seasoned salt
  • 1/2 tbsp black pepper

Pasta and cheese

  • 2 cups elbow macaroni, uncooked Any short pasta can be substituted.
  • 1 cup shredded mozzarella cheese Add more for a cheesier dish.
  • 1/2 cup shredded cheddar cheese

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent.
  • Add the ground beef or turkey, and cook until browned.

Cooking

  • Stir in the tomato sauce, diced tomatoes, beef broth, water, Italian seasoning, Adobo seasoning, bay leaves, seasoned salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for about 30 minutes.
  • Stir in the uncooked elbow macaroni and cook until the pasta is tender, about 8-10 minutes.
  • Remove bay leaves before serving.
  • Top with shredded mozzarella and cheddar cheese before serving. Enjoy!

Notes

To store leftovers, let the goulash cool completely, transfer to an airtight container, and refrigerate for 3-4 days. It can also be frozen for longer storage.
