Meatloaf Mixture

  • 2 pounds ground beef Use lean ground beef for a healthier option.
  • 1 cup breadcrumbs Can substitutes with crushed crackers, oats, or cooked rice.
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/2 cup ketchup
  • 1 cup shredded cheese (optional) Cheddar, mozzarella, gouda, or cheese of your choice.

Topping

  • Tater tots For topping, adjust amount based on preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, and ketchup. Mix until well combined.
  • If using, fold in the shredded cheese.
  • Transfer the mixture to a loaf pan and shape it into a loaf.
  • Top with tater tots, arranging them evenly on top of the meatloaf.

Cooking

  • Bake for about 45-50 minutes, or until the meatloaf is cooked through and the tater tots are golden brown.
  • Let it cool for a few minutes before slicing. Enjoy!

Notes

Serve with a side of steamed vegetables or a crisp salad. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat slices in the microwave or in the oven at 350°F.
