Ingredients
  

Meatloaf Mixture

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup ketchup
  • 1 cup shredded cheese (optional)

Topping

  • 1 bag tater tots

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, and ketchup. Mix until well combined.
  • If using, fold in the shredded cheese.
  • Shape the mixture into a loaf and place it in a baking dish.
  • Top the meatloaf with tater tots evenly arranged on top.

Cooking

  • Bake for 45-50 minutes or until the meatloaf is cooked through and the tater tots are golden brown.
  • Let it cool for a few minutes before slicing and serving.

Notes

Serve with a side of steamed vegetables or a green salad. Enhance flavors with BBQ sauce or ranch dressing. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
